Taking into account much of rural Ireland’s history, I propose to, literally, elevate a symbol of many of the towns and regions in the Southwest’s agricultural history. I find the history of the creamery, the co-op movement, the more radical swing towards workers self-organisation in the 1920’,s and their disappearance quite interesting. The significance of dairy industry in the area has been of huge economic and historical significance. A key industry for Ireland is commemorated in a manner usually reserved for kings or conquering generals.
